At the office cravings are the worst sometimes for they are usually more junk oriented but every now and then a mixture of freshness comes to mind. Today I was craving this tasty creation:

  • 500 g Broccoli (Cut into florets)
  • 2 Sweet Red Pepper (Cut into squares)
  • 2 Red Onions (Chopped onto thin wedges)
  • 1 Cup Green Freekeh
  • 4 Chicken Thighs (Deboned)
  • 100 g Mixed Greens (Chopped Rough)
  • 2 Tsp. Masala Powder
  • 2 Tsp. Olive Oil
  • 1 Tsp. Tahini
  • 1/2 Tsp. Honey

 

To make this it’s a pretty easy get all your veggies on a baking sheet into the oven and bake them till they are golden and tender. While the veggies roast, you would have the freekeh cooked in a saucepan with boiling water just like you do with rice and some stock around 12-15 min till it’s soft but still al dente (You keep adding water till it’s cooked to your liking).

Cover the chicken thighs with oil masala powder and some spices (salt and pepper to your liking as well as red hot paprika). Cook them in the oven till golden and cooked all the way through. Once they cook cool them down a bit and slice them.

Add the veggies and the greens to the freekeh then dress the mix. Toss them to combine then top the dish with the chicken slices.
