While at the office you tend to get a lot of cravings as you would be consuming a lot of energy at working out your tasks, so this dish pops in mind a mixture of both healthy and sinful and to make this you will need:
– 500 grams Chicken Breast
– 1 Cup Cornstarch
– 1 Tsp. Paprika
– 3 Eggs (Whisked)
– 2 Tbsp. Rice Vinegar
– 2 Tbsp. Sugar
– 3 Tbsp. Soy Sauce
– 5 Dried Red Chili Peppers
– Salt for seasoning
– Coconut Oil/Sesame Oil
Mix the paprika and starch along with a pinch of salt and set aside. Get your chicken chopped into bite sized pieces and coat them in eggs then the cornstarch mixture. Heat the oven coat the pan with oil and drizzle them in a little of sesame oil/coconut oil to bake until golden crispy.
Heat some oil in the pan and add some dried chili peppers, cook till it is aromatic and color starts brightening. Add the chicken and cook it till it’s a deeper dark golden color. Stir in the vinegar, sugar, soy sauce, 2 teaspoons of cornstarch in a bowl. Pour into the wok, boil until it thickens and is no longer milky.
Serve with steamed white rice and garnish with spring onions for a fresh crunchy addition.
